Party Pesto Slices

(serves 5-6)
2 tbsp olive oil
3 plum tomatoes
handful of rocket
3 slices of parma ham
half a cucumber, sliced
2 tablespoons of lemon juice
black pepper
1 fresh baguette

freshly made pesto
2 cloves of garlic
handful of basil leaves
1/2 cup grated parmesan
olive oil
handful of pinenuts

How to cook

To make the pesto, add a handful of pinenuts, basil leaves, and parmesan into a blender, along with the chopped garlic add a generous amount of olive oil and blend until smooth. Bake the baguette in the oven for about 10 minutes on 180˚C until golden and crispy. When the baguette is cool, slice into thick slices and spread each one with the pesto sauce. Then top with sliced tomato, parma ham and cucumber, drizzle each with lemon juice and olive oil and season well.
