Kale, Banana, Peanut Butter, Mango and Ginger Smoothie Bowl

Ingredients

Prep/Cooking time: 10mins.

Ingredients:

  • 2 bananas
  • Cashew 35g
  • Kale 40g
  • Mango 70g
  • 1/2 thumb ginger
  • 1 tbsp peanut butter
  • 1 litre almond milk
  • 2 x passionfruit
  • 4 tbsp goji berry seed mix
  • 6 tbsp of popping corn kernels
  • 1 x tbsp coconut oil

 

How to make it…

Place the bananas, mango, kale, peanut butter, ginger, (grated) mango, almond milk and cashews in the blender and blend till smooth then pour into bowls. Half the passion fruits and scrape out the seeds and dispose of the shell/skin. Evenly distribute the seeds across the top of the smoothies then sprinkle over the goji berry seed mix.

Now for the fun part , place a sauce pan on the stove on high and add the corn kernels, quickly cover with a lid, you will start to hear popping while this popping is happening shake the pan gently  so as to stop the corn burning, once the popping stops its ready to go.

Remove from the stove and sprinkle over the smoothie bowl and there you have it smoothies from scraps, enjoy!
