Homemade Wholegrain Pancakes

Ingredients

(serves 4)
1 cup of oats
1 cup of wholegrain flour
1 cup of all purpose flour
1/2 cup of finely chopped apples, peeled
1 teaspoons of baking powder
1/2 teaspoon of nutmeg
1/2 teaspoon of salt
2 cups of milk (or nut milk)
1/4 cup of vegetable oil
2 eggs
1 teaspoon of vanilla paste
2 teaspoons of honey

How to cook

Pre-heat a large frying pan on medium heat. Add a small knob of butter and let it melt. Whisk together the oats, flours, baking powder, nutmeg and salt. In a different bowl whisk together the milk, oil, eggs, vanilla, apple and honey. Pour this mixture into the dry flour mixture and mix until combined. Add a decent amount into the frying pan, enough to make a pancake sized circle.

Fry until small bubbles form on the outside and the mix starts to set. Now it’s time to flip the pancake over, let the other side cook for a minute or two, flip over once more to check it’s cooked and then serve. Drizzle with maple syrup or mixed fruit and ice cream.
