Feta and Red Pepper Salad

Ingredients

(serves 2-3)
3 tbsp olive oil
6 plum tomatoes
handful of rocket or 1 gem lettuce
2 red peppers, sliced
half a cucumber, sliced
6 black olives (optional)
half block of feta cheese
black pepper
lemon juice for dressing

How to make

Slice up the red pepper and cucumber and mix together in a bowl, slice the tomatoes in half and add. Arrange the lettuce or rocket on a large plate and scatter the cucumber, pepper and tomatoes over the top, crumble over the feta cheese. To make the dressing mix together the olive oil, lemon juice and black pepper in a mason jar or jug and then pour over the top of the salad. If using black olives, cut in half and toss on top.
