Coconut and Cocoa Butter Truffles sweetened with maple syrup and vanilla powder
(Makes 10)

Chill time: 30 minutes
ingredients
2 cups cocoa powder
1 cup coconut oil
10 discs cocoa butter (c.10g)
generous 1/2 cup maple syrup
pinch of sea salt
pinch of vanilla powder
13 tsp cold water
how to make it…
Chill a glass of water in the fridge. Gently melt the coconut oil & cocoa butter, in a bowl over a saucepan of hot water, then stir in the maple syrup & cocoa powder. Add the sea salt & vanilla.
To make a basic chocolate truffle, add the cold water one teaspoon at a time, mixing well. The mixture will look like it’s separating; this is normal & doesn’t mean it’s going wrong.
Put in the freezer for about 1/2 hour, then stir & shape into balls. Toss lightly in cocoa powder & store in the fridge or freezer.
To make the various versions: here are my 6 favourite flavour combinations. It’s very much a ‘add to taste’ thing & the challenge is to balance the flavours beautifully. Add the flavours before the water and when adding liquid flavours e.g. lime juice, just add less water to compensate and balance consistency!
