Christmas Cranberry Truffles

These delicious little Christmas truffles make a great after dinner treat or as a gift – if you can bear to give them away and don’t eat them all yourself first!

ingredients (makes 12)
Prep Time : 20mins
200g good quality dates
40g chopped almonds
75g cranberry and blueberry mix
10g fresh orange zest
1 tsp nutmeg
1/2 tsp of cinnamon
1/2 tsp powdered ginger
35g 90% cocoa chocolate
20g white chocolate
goji berries and edible
flowers to decorate
how to make it..
De-stone the dates and add to a food processor along with the almonds, cranberries, orange peel and spices. Blitz until it the mixture begins to form a ball, this may take a few minutes. Roll your mix into small balls and place on a tray in the fridge to cool down and set for fifteen minutes.
Melt the dark chocolate in a bain marie and carefully coat your mince pie balls in the melted chocolate and put onto a sheet of baking paper (helps them not to stick to anything) on a plate and pop them in the fridge.

Once the chocolate has set, melt the white chocolate in a bain marie and add a small amount to the top of each truffle. Quickly place them back in the fridge to prevent the dark chocolate melting. Finally, if you’d like to make these as a Christmas gift or treat – garnish with small sprigs of edible flowers and goji berries for that festive Christmas pudding look
