Coconut rum balls


These tasty little coconut rum balls are filled with coconut, cocoa and almond flour and spiked with rum for a tasty twist.

Ingredients (makes 12)
100 g almond flour
100 ml coconut oil
3 tbsp dark rum
100 g dark chocolate chips
4 tbsp cocoa
100 g grated coconut
+ extra to dust
2 tbsp high grade maple syrup

how to make it…
Mix together the almond flour, grated coconut and dark chocolate chips in a large bowl. In a separate bowl, whisk together the coconut oil, rum and maple syrup. Pour the oil into the almond flour and mix together. Roll the dough into small truffles and coat in a little coconut. Chill in the fridge for an hour and then serve.
